That’s “Chewy” as in soft/not crispy/melt in your mouth, not “Chewie” as in “made from Chewbacca” because EWWW. Just to be clear.
Anyway, now that we have that established, here’s the recipe for some fairly delicious oatmeal cookies 😉
- 2 sticks unsalted butter*
- 1 large egg
- 1 cup + 2tbsp unrefined cane sugar**
- 1/2 cup Turbinado sugar
- 1 tbsp vanilla extract***
- 1 tsp cinnamon
- 2 dashes sea salt
- 1/2 tsp apple pie spice
- 1 3/4 cups self-rising flour
- 1 1/2 cups quick-cook oats
Bring the butter or margarine to room temperature.
Place in a mixing bowl and add 1 cup unrefined sugar and the turbinado sugar, and mix on medium speed until it’s creamed well.
Add egg, vanilla, cinnamon, apple pie spice, and salt and mix for one more minute.
Reduce speed to low, and add flour, mixing until the flour is stirred in.
Turn mixer off, and add oats, stirring by hand until just blended.
Drop by rounded tablespoonfuls onto a parchment-covered baking sheet.****
Sprinkle the extra unrefined sugar on top of the cookies like you’re tossing glitter at a princess party.*****
Bake at 350 for 12-14 minutes, or until barely golden brown.
Take out of oven, let them cool for 10 minutes, and dig in 🙂
*or margarine – I used Fleischmann’s Unsalted Margarine for my dairy-allergic son
**Zulka Morena is a great one and is what we use here…we’re not vegan, but I have issues with using bone char to refine anything. Gross. I prefer unrefined. It tastes better, too, honest.
***I make my own…750ml White Rum, and 6 vanilla beans cut in half lengthwise. Add beans to bottle, shake well, put in a dark cupboard. Shake the bottle when you open the cupboard to get other things out and you remember “oh yes, I’m supposed to shake that daily”. It’s good to go after 2 weeks…I decant it into a couple of smaller bottles, and top off the first bottle with more rum, and keep it going as a perpetual bottle of vanilla goodness.
****You should get 24 from this recipe, but it depends on how large you make them. Go wild and make 12 gigantic cookies if you want, you deserve it!
*****You don’t have to put a hand on your hip and toss your hair back, though, unless you want to. But it tastes better if you give it at least a little sass!
